Hans, one of my customers, a bon vivant and passionate cook, often shows up at my door because he needs more orange liqueur. I asked him what he does with all that orange liqueur.
"To make a chocolate mousse, the best chocolate mousse." (Could it be the orange liqueur?)
I tried this wonderful dessert myself the day before yesterday and wanted to share the recipe with you. It's actually a Thermomix recipe, but since I don't own one, I adapted it slightly. Many thanks, Hans, for this great recipe!

Stirred dessert
Chocolate mousse
- 200g dark chocolate
- 4 eggs
- 20-30 g orange liqueur
- 1 strong espresso
- 50 g butter, in pieces
- 250 g cream
- 1 Orange
Melt the chocolate in a double boiler, heating it to about 60°C (140°F). Remove the bowl from the heat. Add the eggs, orange liqueur, and espresso, and mix well. The mixture may clump. Stir persistently; you'll get it nice and smooth again. 🙂
Add the butter and stir well. Pour the mixture into a bowl and chill. Whip the cream until stiff peaks form, then fold it into the chilled chocolate mixture and let it set in the refrigerator for about 3 hours.
Garnish with orange pieces or orange segments.
