Requirements

Please note the following basic requirements so that we can distill schnapps from your fruit.

Unprocessed

The fruit you want to distill must be unprocessed . We generally do not distill mashes that weren't mashed on our farm.

Ripe fruit

The fruit must be ripe, clean, and healthy . High-quality fruit has two advantages: the distilled spirit tastes better, and a higher distillation yield can be expected.

Minimum quantity

Our still holds 150 liters of mash. In order for us to distill your fruit, a minimum of approximately 100 liters (approximately 120 kg of fruit ) of mash must be reached.

Cost

Below, we would like to outline the costs associated with contract distilling. In the following example, we assume approximately 350 kg of fruit (which yields approximately 300 liters of mash).

Prepare fruit

(Mashing, including yeast, mash barrel, mash care)

  • Stone fruit: €90 (incl. VAT)
  • Pome fruit 125 € (incl. VAT

Distillation

  • 1st firing: 120 € (incl. VAT)
  • Each additional burning process (immediately after): 90 € (incl. VAT)

completion

  • Blending to 40% vol, filtration: 70 € (incl. VAT)

Alcohol tax

  • Spirits tax (€10.22 per liter of alcohol)

Expectation

Often, expectations and reality regarding the amount of liquor that flows from a lot of fruit are far apart. Therefore, we'd like to show you with a small calculation example what amount of liquor you can expect:

With 150 liters of Zibarten mash (yield according to the list: 3.5%), a yield of 5.25 liters of Zibarten schnapps (100% vol) can be expected. However, the undrinkable foreshots and tails must still be deducted from this, leaving approximately 2 liters of pure alcohol (LA = pure alcohol). The middle run is ethanol and drinkable, the good schnapps. This is then adjusted to a drinkable alcohol strength (e.g., 40% vol), leaving a good 4 liters of Zibarten schnapps .

With good mash material (fully ripe, healthy), you can expect a higher yield. We've had yields over 4% (although only 3.5% tax is always payable).

Sequence

In the first step, we clarify all the conditions and costs. After your fruit has been mashed and fully fermented on our farm, we register for distillation.

We will prepare the appropriate form for you, which you will sign and send to the Stuttgart Main Customs Office. After a few days, you will receive a distilling permit from customs, as well as a
Demand for payment of alcohol tax. Then nothing stands in the way of distilling your fruit.

The high-proof liquor then needs to be adjusted to a drinkable alcohol strength (e.g., 40% ABV) and filtered. We'll take care of that.
