Quince liqueur
The quince originates from southwest Asia, but has been found in Central Europe since the 19th century. Quinces are not only a rarity, but also among the most labor-intensive fruits in distilling. The down on each quince is removed by hand. The effort is worth it: the result is a delicate sweet and sour liqueur whose typical aroma greets the nose.
Production
First, the fuzz on the skin of each quince is removed by hand. This laborious process is important, as the fuzz would impart a very bitter flavor to the liqueur. Neutral alcohol at 96% ABV is infused with crushed quince pulp and refined with quince juice. This is therefore not just an infused liqueur, but also a fruit juice liqueur.
